If you are going to use dried vegetables then put them in cold water the night before. The next day drain the water and boil the vegetables in cold water with salt.

I used canned vegetables (beans, peas, chickpeas, corn).

I drained them well of the canned water, I passed them under a stream of cold water and again I drained them well of the water.

I peeled the carrot, washed it, cut it into four lengths and then slices.

I washed the green onion strands and cut them into rounds.

I put some hot oil in a pan.

I added the mushrooms together with the sliced ​​pancetta and sautéed over high heat for five minutes. (If you are going to use fresh mushrooms, wash them, remove the skin. Then add the carrot and green onion.

Method of preparation

Cut the cabbage into large pieces, broccoli into small bunches, the baby carrot into 3 pieces each and the green part of the onion into medium pieces.
Finely chop the ginger and garlic and mix them in a bowl with the soy sauce, rice vinegar and sesame oil.
Put all the vegetables (except onions) together with the noodles, in boiling salted water. Let them boil for 3 minutes.
Remove the vegetables and noodles from the pot, drain and place in the dressing bowl, along with the black sesame and green onions.
Boil eggs for 4 minutes, after which the water starts to boil.
Place the mixture on a plate and place the cleaned and split egg in half on top. You can optionally add spicy sauce.
