The Bavarian cream is prepared simply by mixing the liquid cream well until the firm cream stage, then it is mixed with the berry coulis in which I incorporated gelatin.

For the strawberry cream, mix the strawberries with sugar and add gelatin or agar.

For the cream above, incorporate gelatin or agar agar in the berry coulis.

The lollipop hearts are made by putting half a tart candy in a small form of silicone heart, it is left to melt at 180 degrees, a toothpick is inserted and it is suddenly cooled in cold water with all the shape, it is extracted without problems. .

The meringue turrets are dipped in strawberry cream and left to dry for a day.

The assembly is a bit more complicated, start by pouring Bavarian cream in the form of silicone, add the strawberry cream and the cake top. Leave in the fridge for at least 12 hours and then return to a rack. Add the berry topping and mount the decoration. I used strawberries, raspberries, candy hearts and meringue turrets. Over the strawberries I added a gloss of napage to shine.
